20 Minute Crunchy Chicken Quesadillas Recipe

Cheese and tortilla lovers will love our crunchy quesadillas. They are easy to make and perfect for breakfast, lunch, dinner, and snacks. Seriously anytime is an excellent time for warm cheesy quesadillas. And so delicious topped with guacamole, salsa Fresca, and sour cream.  

And you can fill them with anything! I've made them with shredded chicken, hamburger, carnitas, carne asada, sauteed mushrooms, fire-roasted poblano peppers, scrambled eggs, beans, potatoes, roasted cauliflower, and more. The combinations are endless. And they're a perfect way to re-purpose leftovers.

One of my favorite way to share quesadilla joy is to host a quesadilla buffet party. I cover my dining room table with my favorite quesadilla ingredients, carnitas, garlic shrimp, serrano peppers, shredded kitchen, tomatoes, fire-roasted poblano peppers, onions, cilantro, refried beans, Spanish rice, and CHEESE. Our guests fill their plates with their favorite ingredients, bring them to me, and I make them personalized quesadillas. Many of our guests have seconds, thirds, and even request quesadillas to go! I love seeing everyone in quesadilla bliss. 

Quesadillas are also a family tradition. My sons ate breakfast quesadillas for years, and now my young niece and nephew always request tias quesadillas regardless of what else we're eating as well as extras to take home. I'm thrilled that my quesadillas continue to spread smiles and fill hungry tummies.

Shredded Chicken Quesadillas Recipe

Tools

Ingredients - Makes 4 Quesadillas

  • 8 small flour or corn tortillas

  • 1 cup warm shredded chicken (Recipe Video)

  • 2 cups Mexican Blend shredded cheese

  • ½ cup chopped tomatoes

  • ½ cup chopped onions

  • ½ cup chopped serranos

  • ¼ cup chopped cilantro

Optional toppings

Directions

  1. Heat comal (medium)

  2. Place one tortilla on the comal.

  3. Layer all the ingredients on the tortilla, beginning with the cheese, shredded chicken, and other toppings, and cover it with another tortilla

  4. Let cook and flip over using the pancake turner. Cook long enough to make both tortillas crunchy without burning and melting the cheese.

  5. Remove from the comal, place the quesadilla on a cutting board, and cut it into 4 pieces.

  6. Place on a plate with Salsa Fresca, Guacamole, and sour cream, and ENJOY!
